About our Distillers Special HM Anise Gin
People often asked us if we made an Anise Gin. While we did have one, we felt it needed a bolder anise flavour.
After completing his WSET Level 3 certification, distiller my dad Gavin gained a deeper understanding of world spirits like ouzo, pastis, absinthe, and raki. This knowledge sparked his curiosity and inspired him to experiment with anise again. With our previous batch of Anise Gin sold out, Dad began his new round of experimentation.
Distilled at 82% ABV, the gin distillate burst with intense aniseed flavours, its aroma filling the distillery. After distillation, the spirit was carefully reduced to 43% ABV and bottled.
Before releasing this gin, we tested it with 10 anise lovers—and they all gave it two enthusiastic thumbs up! That’s when we knew it was ready to go.
