As we set out on our quest to make delicious full flavoured gins, by chance we fortunately stumbled across now our friends at Australian Native Products (ANP). They provided us with a wealth of knowledge on distillation practices and flavour profiles. Their high-quality anise and lemon myrtles botanicals inspired us to craft our HM Anise gin.
The still was loaded with the highest purity extra neutral alcohol and a heavy handed amount of juniper berries to create a smooth base. We further added coriander seeds, some star anise, cassia sticks, a sprinkling of finely cut lemon myrtle and what we thought was a modest amount of Anise myrtle.
We distilled the mix with the resultant concentrated gin coming out with overtones of liquorice. The average alcohol by volume (ABV) out of the still was 78%.
The gin was then stored in stainless steel tanks and after some time diluted to 43% ABV. Our anise gin is then bottled and packed ready to enjoy.
To taste our HM Anise Gin is very smooth and gives a warming finish from the flavours of the anise myrtle.
We recommend pairing the Anise Gin with spiced orange ginger ale, traditional tonic or even a grapefruit soda mixer. Fresh grapefruit or a slice of orange as a garnish.
