This limited-edition Chilli Gin was born from a chance meeting with Sandra, founder of Six-Eyed Scorpion Crispy Chilli Oil, at a local market. As the day wound down, gin and tonics were exchanged for chilli samples, sparking a collaboration that resulted in a gin like no other.

HM Six-Eyed Scorpion Chilli Gin is crafted by macerating Six-Eyed Scorpion’s Extra Spicy Chilli ingredients in our HM Rare Dry Gin. After several iterations, we perfected a recipe that delivers killer flavour designed to elevate your cocktails. You won’t be disappointed.

How to Serve HM Six-Eyed Chilli Gin

Spice up your drinks game with HM Six-Eyed Chilli Gin! With its fiery chili kick, this gin is a flavor bomb waiting to explode. Whether you’re mixing it up or getting creative, this one-of-a-kind gin brings the heat and the fun. Check out our favourite ways to serve this chilli gin!

Ingredients:

60ml HM Six-Eyed Chilli Gin

22ml
 Fresh lime juice

120ml Grapefruit soda

Salt for the rim

Lime wedge for garnish

Method:

1. Best served in a tall glass, salt the rim. To salt the rim, rub some lime around the rim of the glass and then dip the glass in the salt -woolah!

2. Add ice to your glass and add all your ingredients.

3. Stir and garnish with lime wedge.

Ingredients:

45ml HM Six-Eyed Chilli Gin

30ml Cointreau

22ml Fresh lime juice

Salt for the rim

Lime wedge for garnish

Method:

1. 
 Best served in a margarita or rocks(short) glass, salt the rim. To salt the rim, rub some lime around the rim of the glass and then dip the glass in the salt.

2. In a cocktail shaker with ice add your HM Six-Eyed Chilli Gin, Cointreau and fresh lime juice. Shake for 20 seconds.

3. Strain into your glass and garnish – enjoy!

Ingredients:

60ml HM Six-Eyed Chilli Gin, 

15ml
 Fresh lime juice, 

120ml Ginger beer, 

Lime wedge for garnish 



Method:

1. Combine your HM Six-Eyed Chilli Gin and fresh lime juice in a mule or tall glass.

2. Top with ginger beer and stir to combine.

3. Garnish with lime wedge.

With HM Six-Eyed Chilli Gin’s spicy kick, its best to pair with a mixer that can match it’s intensity. We tend to pair with non-traditional mixers such as flavoured tonics, sodas and ginger beer/ale. Here are our favorite mixers:

– Mischief Brew – Grapefruit Soda

– Sodasmith – Tasmanian Grapefruit Soda

– Sidekick – Ginger Beer

Ingredients:

45ml HM Six-Eyed Chilli Gin

15ml
Triple Sec

30ml Fresh lime juice

30ml Carrot juice

15ml Ginger syrup

Lime wedge for garnish

Salt and lime zest for rim

Method:

1. Combine lime zest with four parts salt. Rub lime wedge on the rim of your rocks glass. Dip the rim in the lime and salt mix.

2. To a cocktail shaker with ice add all your ingredients. Shake for 20 seconds.

3. Strain into your glass and garnish with lime wedge.

Our passion for HM Gin comes from our shared love of producing high quality craft gins. HM Gin started as a lockdown hobby in 2020 and has since been awarded Australia’s best London Dry Gin at the World Gin Awards in 2023.
