When we set out to craft our HM Rare Dry Gin we were focused on delivering a gin that was uncomplicated, fresh and with a uniquely smooth finish. On the palette you will taste notes of citrus and spice over a balanced juniper base.

There are countless ways you can enjoy our HM Rare Dry Gin. This London Dry style gin is incredibly versatile and is the perfect base for any cocktail. Delicious in a G & T with most garnishes or, with it’s clean classic finish, pairs seamlessly to make an irresistible martini or gimlet.

How we like to drink it
Head distiller Gavin likes to enjoy HM Rare Dry Gin over ice. Alternately you’ll find him drinking it with Mediterranean tonic and a fresh slice of orange.
And fellow co-owner Amy, well she likes 50ml HM Rare Dry Gin over ice with 20ml of St Germain liqueur. For a longer drink she’ll top up with soda and a slice of cucumber to garnish.
Crafting HM No 1 Rare Dry Gin
For the base of our award-winning HM Rare Dry Gin, we use the highest purity base alcohol and a generous portion of Juniper berries. To the still we further add coriander seeds, cassia bark and finely cut locally grown lemon and anise myrtles.
HM Rare Dry Gin is a simple recipe with a smooth clean finish. Bright and refreshing this will soon be your go-to dry gin.
Fun fact
When head distiller Gavin originally set out to make our signature Rare Dry Gin he became heavy handed with the oranges in production (read the story here) and instead produced our awarded HM Orange Squeeze Gin.

How To Serve HM Rare Dry Gin

45ml HM No 1 Rare Dry Gin

22ml Fresh lime juice
22ml Raspberry syrup
60ml Ginger ale
Lime wheel and raspberry to garnish

Preparation

1. To a cocktail shaker with ice add gin, lime juice and raspberry syrup. 2. Shake for 20 seconds.

3. Strain into a highball glass filled with ice.
4. Top with ginger ale.
5. Garnish with a lime wheel and raspberry.

60ml HM Rare Dry Gin
120 Tonic water – we recommend Long Rays Pacific or Fever-tree Mediterranean tonic water


Preparation

To a glass with ice add the gin and tonic water. Lightly stir to combine and garnish with a orange wedge or rosemary sprig.

30ml Lime juice
22ml Sugar syrup
Lime slice

Preparation

1. To a cocktail shaker add ice, gin, lime juice and sugar syrup and shake for 20 seconds.
2. Strain into a coupe glass.
3. Garnish with a lime slice.

At HM Gin we are a father daughter duo on a mission to make everyone a gin lover.

Our passion for HM Gin comes from our shared love of producing high quality craft gins. HM Gin started as a lockdown hobby in 2020 and has since been awarded Australia’s best London Dry Gin at the World Gin Awards in 2023.
