The Story Behind HM Blushing Pink Gin
In the early days of Hillmartin Distillery, our friends encouraged us to add a Pink Gin to our lineup. Taking their advice, we chose fresh Australian strawberries and raspberries as the key botanicals, allowing their vibrant flavours to shine while keeping the rest simple. Naturally sweet, yet dry on the palate, this Pink Gin stands out with no artificial sweeteners—just pure fruit goodness.
Crafting HM Blushing Pink Gin
We start with the highest-purity alcohol available in Australia and juniper berries as the base for our HM Blushing Pink Gin. Fresh strawberries, raspberries, coriander seeds, lemon myrtle, anise myrtle, and a touch of coconut sugar are added to the still. We then fill the botanical basket with even more fresh berries to amplify the flavour. During distillation, we change the botanical basket to maintain that fresh berry flavour.
Post distillation we create a berry syrup by cooking more fresh strawberries and raspberries with water. This syrup is strained and then added to the distilled gin. The gin is then diluted to 43% ABV and allowed to rest before being bottled ready for you to enjoy.
Tasting notes
On the nose, a sweet blend of fresh raspberries and strawberries. Expect a touch of sweetness on the palate, with vibrant raspberry and strawberry notes layered over a dry juniper base. A warming mouthfeel and a smooth, crisp finish.
