HM Seven Spice Chai Gin is an irresistible blend of seven exotic spices, juniper berries and locally produced honey.

Big and bold in flavour, it is unlike any other gin you’ve tasted before. The addition of honey creates a creamy mouthfeel that balances the medley of spices, delivering HM Gin’s signature smooth finish.

Best served with ginger ale, on the rocks or as a Dirty Chai Martini.

Crafting HM Seven Spice Chai Gin

In crafting HM Seven Spice Chai Gin we distil cinnamon, star anise, cardamon, nutmeg, cloves, black pepper, ginger and tea extract with a healthy dose of juniper. All botanicals are added to the pot of the still for distillation with nothing in the botanical basket.

After distillation, we add a generous amount of Wildflower honey to balance the spices and juniper, and of course, add a touch of sweetness to give our chai spiced gin its signature smooth finish. This creates a versatile gin that has a rich mouth feel and is full of flavour.

Creating HM Seven Spice Chai Gin also helped us connect with our local community, as all honey is sourced from Bizzy Beehive Australia based in Beveridge Victoria.

Juniper berries, black tea extract, black pepper, cardamom, cinnamon, cloves, ginger, nutmeg and star anise. Wildflower honey is added post distillation.

Picture this – Gav, our Head Distiller, and I were on a road trip to meet a fellow distillery owner who also produces Chai products. Being a Chai enthusiast myself, the car ride became an impromptu brainstorming session. With excitement, I blurted out, “You know, all the ingredients used to make Chai also go into gin – but never all together! Let’s give it a shot!”

Our friend generously gave us a kilo bag of their raw Chai mixture, and with a twinkle in our eyes, we set out to distil. The result? Well, you’re about to discover the magic of HM Seven Spice Chai Gin!

HM Seven Spice Chai is big and bold in flavour and this because we use 25 times the normal quantity of ingredients than in any other of our gins. And the addition of honey creates a creamy mouthfeel that balances the medley of spices, delivering HM Gin’s signature smooth finish.

How To Serve Seven Spice Chai Gin

With its bold flavour HM Seven Spice Chai Gin is incredibly versatile. The world is your oyster, just use your imagination or try some of these cocktails below:

Ingredients:

30ml HM Seven Spice Chai Gin

30ml Espresso

30ml Coffee liqueur, avoid overly sweet liqueurs like Kahlua

Process:

1. Add all ingredients to a cocktail shaker and dry shake for 20 seconds.

2. Add ice to your shaker and shake for an additional 20-30 seconds.

3. Strain into a chilled martini glass

Ingredients:

30ml HM Seven Spice Chai Gin

30ml Cognac

10ml Creme de Cacao

15ml Cream

15ml Milk

Process:

1. Add all ingredients to a cocktail shaker with ice and vigorously shake.

2.Double strain into a chilled coupe glass.

3. Optional garnish of cinnamon sugar dusted in a line.

Ingredients:

45ml HM Seven Spice Chai Gin

30ml Lemon Juice

15ml Sugar syrup

15ml Egg white

5 Basil leaves

Top with soda

Process:

1. Add all ingredients except the soda to a cocktail shaker and dry shake.

2.Add ice to your shaker and shake for an additional 20-30 seconds.

3. Double strain into a chilled Collins glass with cubed ice and top with soda.

4. Garnish with basil leaf.

45ml Seven Spice Chai Gin

120ml Tonic water – we recommend Long Rays Pacific or Fever-tree Mediterranean tonic water

To a glass with ice add the gin and tonic water. Lightly stir the ingredients to combine and garnish with a orange slice.

Ingredients:

45ml HM Seven Spice Chai Gin

120ml Dry ginger ale

Process:

1. Fill a tall glass with ice.

2. Add your gin and dry ginger ale.

3. Lightly stir and garnish with orange wheel.

Ingredients:

30ml HM Seven Spice Chai Gin

30ml Espresso

1 scoop of vanilla ice-cream

Process:

1. To a bowl add your scoop of vanilla ice-cream.

2. Pour the HM Seven Spice Chai Gin over the ice-cream followed by a shot of espresso.

Ingredients:

60ml HM Seven Spice Chai Gin

60ml Grapefruit juice

30ml Lime juice

10ml Agave syrup

15ml Jalapeo syrup

Top with soda water

Lime wheel garnish

Process:

1. To a cocktail shaker with ice add all ingredients except soda water. 

2. Shake well and strain over ice in a highball glass.

3. Top with soda water and garnish with lime wheel.
