HM 2022 Pinot Noir Gin has been hand crafted by steeping hand picked single vineyard Victorian Pinot Noir grapes with our famous HM No 6 Rare Dry Gin.

At the completion of the steeping process the grapes were separated from the resultant gin and then hand pressed to extract all remaining juice. The juice was combined with the gin to ensure that none of the mouth-watering juices were spared and to give the gin it’s warm rich colour.

We are beyond proud of HM 2022 Pinot Noir gin. It is elegant and aromatic, has great depth of flavour on the palate and is incredibly smooth. Those lucky enough to have tasted the pre release samples have scored this gin a ten out of ten.

This is a very limited release with just 130 bottles of HM 2022 Pinot Noir gin on offer for sale. Get in quick – we guarantee you will not be disappointed.

We recommend pairing HM 2022 Pinot Noir gin with a splash of capi dry tonic water and ice so as to not detract from the beautiful natural flavour of the gin. On the rocks is the way we will be drinking it ourselves.

    Two of my favourite drinks combined. I was so pleasantly surprised at how smooth and easy to drink this was. I love it as is on ice and can’t wait to experiment with other ways to drink it. LOVE it.

CRAFTING HM 2022 PINOT NOIR GIN - THE PROCESS

1. We sourced some lovely Pinot Noir grapes from Panton Hill in the Diamond Valley area of Victoria 

2. We removed the stalks from the grapes by hand

 

3. We took our concentrated Rare Dry gin at 78% ABV and soaked the pinot grapes in this for an extended period of time. We then decanted the gin from the grapes.

4. We then  took the grapes and hand pressed them to extract additional flavour and colour 

5. The pressed juice was then added to the Pinot Noir gin. This  significantly enhanced the flavour and colour of the final product.

6. The Pinot Noir gin was then diluted to 42.7% ABV, bottled and labelled ready for release to coincide with World Gin Day on 11th June!
